Boy, do we love coffee.  That first sip in the morning? A bit of heaven right here on earth.  So it just makes sense to take those yummy flavors and whip them up into a cookie recipe.  Our Coffee Cookies with Mocha Buttercream Frosting is our attempt to do just that.  The cake-y cookies are the perfect delivery device for our delicious Mocha frosting.  If you are a coffee lover, these are the cookies for you!  Mmmmm ….. Mmmmm …. good!

How to get the Perfect Coffee Flavor

The coffee flavor in these yummy cookies comes from dissolved Instant Coffee granules.  We found that brewed coffee wasn’t intense enough to flavor the cookie dough. This Starbucks French Roast Instant Coffee worked perfectly but you can use any other brand of Instant Coffee.  Dissolve the granules of a single packet in 1/4 cup of warm water.  Allow the water to cool to room temperature before you add it to the cookie dough.

How to Make the Coffee Cookies

Step 1: In a mixing bowl, cream the butter and sugar for three minutes. Next, add the eggs and mix another three minutes until the dough is light and fluffy. At this point, you should mix in the coffee mixture and the Half n’ Half and mix just until combined.
Step 2: Add the baking soda and salt and combine.  Finally, mix in the flour.  Refrigerate the dough for 30 minutes.

Step 3:  Roll the dough into balls and flatten slightly onto the cookie sheet before baking.
Step 4: Bake the Coffee Cookies in an oven preheated to 350-degrees for 9-10 minutes and allow them to completely cool before you frost them.

Frosting and Decorating the Cookies

Step 6: Place the Chocolate Chips in a plastic bag.  Heat in the microwave until they are melted.  Snip off one of the ends of the plastic bag. You will use this melted chocolate to add a decorative drizzle to the top of the cookies.

Step 7: Frost the Coffee Cookies with our creamy and dreamy The Best Mocha Buttercream Frosting.  
Step 8: Drizzle the melted chocolate over the Mocha Frosting.

Ingredients

  • 1 cup Butter (Salted, Sweet Cream, Softened to Room Temperature)
  • 2 cups Powdered Sugar
  • 2 Large Eggs
  • 2 tablespoons Instant Coffee dissolved in 1/4 cup water
  • 1 1/2 tablespoons Half n' Half
  • 3 1/2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1 batch of our The Best Mocha Buttercream Frosting
  • 1/4 cup melted Chocolate Chips

Instructions

  1. In a mixing bowl, cream butter and sugar for 3 minutes.
  2. Add the eggs and mix another three minutes until the dough is light and fluffy.
  3. Mix in the Instant Coffee that has been dissolved in water and the Half and Half and mix until combined.
  4. Mix in the baking soda and salt.
  5. Finally, mix in the flour.
  6. Refrigerate the dough for 30 minutes.
  7. Roll the dough into balls and slightly flatten them.
  8. Bake in an oven preheated to 350 degrees for 9-10 minutes.
  9. Allow the cookies to cool.
  10. Frost cookies with a batch of our delicious The Best Mocha Buttercream Frosting
  11. Drizzle the tops of the frosted cookies with melted chocolate chips.
