Toasted Marshmallow Rice Krispie Treats

Level up your dessert game with this easy Toasted Marshmallow Rice Krispie Treat recipe that combines brown butter and roasted marshmallows in an elevated version of a classic treat. Easy to make and perfect for any occasion! 

Ingredients

  • 8 tablespoons Salted Sweet Cream Butter
  • 8 cups Mini Marshmallows
  • 8 cups Rice Krispie Cereal

Instructions

  1. Melt the butter in a large saucepan on medium-low heat, continue heating the butter and stirring until you have Brown Butter.  If you've never made Brown Butter before you can find detailed instructions on How to Make Brown Butter right here.
  2. Add 7 cups of the Mini Marshmallows to the brown butter.
  3. Stir the marshmallows so they are completely covered in the melted brown butter. Make sure to get all the yummy bits of brown butter goodness off the bottom of the pan and onto the marshmallows.
  4. On medium-low heat, stir the marshmallows continually until they are completely melted. When the marshmallows are melted, take the pan off the heat.
  5. Add the Rice Krispies cereal to the pan.
  6. Fold together until the cereal is covered in the brown butter marshmallow mixture.
  7. Spoon the mixture into a 9×13″ pan. We line our pan with a piece of parchment paper to make removing the treats from the pan easier.
  8. Lightly press the mixture into the pan.  You don’t want to press the mixture down too compactly, just smooth the top with a spatula or butter your fingers and pat down the top.
  9. Sprinkle 1 cup of Mini Marshmallows on the top of the treats. Place the pan under the broiler for 1-2 minutes or until the Marshmallows are toasted. Watch closely so the marshmallows don't burn.
  10. Let the Rice Krispie Treats cool and then cut them into squares.

Notes

Storing/Freezing Instructions
Rice Krispie Treats will last 2-3 days at room temperature in an air-tight container before they start to get stale.  You can extend that timeline a few days if you store them in the refrigerator and then take them out about 30 minutes before you eat them.  They freeze up great though and that is what we do if we want to make these ahead of time for a party or a family gathering.  They defrost very quickly and taste great once they are defrosted.  You can keep them in the freezer for up to a couple of months.
