Christmas Sugar Cookie Sandwiches are a fun take on sugar cookies with frosting and will be a hit at your Christmas party or potluck.

  1. Make a half batch of our yummy and easy-to-make Sugar Cookie Recipe to make our Sandwich cookies. You can find the recipe and detailed instructions on how to make the dough here.
  2. Split the dough into two portions and color one red and the other green.
  3. Press a small ball of cookie dough down into a Wilton Cookie Sandwich Pan (which you can find on Amazon). You don't want to fill the mold all the way to the top or you will have a sharp edge around the cookie.
  4. Bake the cookies in a 350-degree oven for 5-6 minutes.  You should do a test batch with just a couple of cookies first to get the timing right.  If you leave them in too long the bottom of the cookies gets slightly brown and the Sugar Cookie Sandwiches don't look as pretty.  In our oven, 5 minutes was the right amount of time.
  5. While the cookies are cooling, make up a batch of our Best Buttercream Frosting Recipe.  You can find our recipe for buttercream frosting here.
  6. Load up a pastry bag (or a plastic sandwich bag) with the buttercream frosting and pipe on a circle of buttercream frosting. You don't want too much or the frosting will smush out of the cookie when you eat it.
  7. Add a second cookie and your Christmas Sugar Cookie Sandwiches are ready to eat!
