These Pumpkin Spice Cake Bites combine Pumpkin cake and Pumpkin Spice Frosting in a unique take on a Fall or Thanksgiving dessert.

Ingredients

  • 1/2 cup Butter, softened to room temperature (Sweet Cream Salted)
  • 1 cup Granulated Sugar
  • 2 Large Eggs
  • 1 cup Canned Pumpkin
  • 2 cups All-Purpose Flour
  • 4 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 2 1/2 teaspoons Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/4 teaspoon Ginger
  • 1 batch of our Pumpkin Spice Buttercream Frosting
  • Whipped Cream

Instructions

  1. In a mixer cream the butter and sugar until light and fluffy.
  2. Add eggs and pumpkin and mix well.
  3. Sift flour, baking powder, salt, and spices together and fold them into batter.
  4. Mix until well blended.
  5. Line a 12" x 9" Jelly Roll/Cookie Sheet with parchment paper and then spoon the batter into the cookie sheet.
  6. Use a spatula to spread the batter evenly on the cookie sheet.
  7. Bake in a 350-degree oven for approximately 15 minutes.
  8. Make up a batch of our delicious Pumpkin Spice Buttercream Frosting.
  9. Cut into bite-sized pieces.
  10. Top with a swirl of Whipped Cream.
