Lemon Blueberry Cookies

Lemon Blueberry Cookies

These Lemon Blueberry Cookies have just the right combination of fresh lemon and blueberry flavor. They are soft and sweet, easy to make, and topped with a yummy homemade Lemon Icing. Delish!

Ingredients

Cookies

  • 1 cup Butter (Salted, Softened to room temperature)
  • 2 cups Powdered Sugar
  • 2 Large Eggs
  • 1/4 cup fresh Lemon Juice
  • 2 tablespoons Lemon Zest
  • 1 1/2 tablespoons Half n' Half
  • 3 1/2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 1/2 cups Fresh Blueberries

Lemon Icing

  • 2 cups Powdered Sugar
  • 4 tablespoons Butter (Sweet Cream Salted, Melted)
  • 3-4 tablespoons Lemon Juice

Instructions

    1. Soften the butter to room temperature and then add it to a mixing bowl with the powdered sugar.
    2. Cream on medium speed for 3 minutes.
    3. Add the eggs, lemon juice, lemon zest, and Half & Half, and continue mixing for an additional 3 minutes.
    4. Add the Baking Powder and Flour and mix only until the flour is incorporated into the cookie dough.
    5. Wash and dry the Fresh Blueberries and add them to the cookie dough.
    6. Fold in the blueberries just until they are evenly distributed in the cookie dough.
    7. Measure approximately 2 ounces of cookie dough and press it down onto a cookie sheet lined with parchment paper.
    8. Bake the cookies in an oven preheated to 350 degrees for 9-10 minutes or until the cookies are golden brown around the edges.
    9. Allow the cookies to completely cool.
    10. While the cookies are cooling, make the Lemon Icing.  Add the powdered sugar and melted butter to a mixing bowl.
    11. Stir with a spoon until mixed. It will still seem dry.
    12. Add lemon juice, 1 tablespoon at a time, and stir with a spoon.
    13. Continue to add the lemon juice until the icing is smooth and the right consistency for drizzling over the cookies.
    14. Drizzle the lemon juice over the tops of the cookies once they are fully cooled.
    15. Allow the icing to set up before storing the cookies.

Notes

Storage Instructions
Cookies should always be stored in an airtight container.  They should be completely cooled before storing them. We usually add a layer of parchment paper between each row of cookies in our plastic container.  Cookies stored at room temperature should stay fresh for 3-4 days. You can also keep them in the refrigerator and that extends their freshness for up to a week. If you need them to last longer, you can freeze them for up to 3 months. You can pull them out of the freezer and leave them on the counter for 1 hour and they will be ready to eat.
