These super easy-to-make Birthday Cake Mix Cookies taste and look just like the yummy classic yellow cake and chocolate frosting Birthday Cake that everybody loves.

Ingredients

Yellow Cake Mix Cookies

  • 2 boxes Yellow Cake Mix
  • 2 boxes Vanilla Pudding Mix (3.4 oz.)
  • 1 cup Melted Butter (Sweet Cream, Salted)
  • 4 Large Eggs
  • 1/3 cup Jimmies Sprinkles

Chocolate Buttercream Frosting

  • 1 cup Butter, softened (we use Salted, Sweet Cream Butter)
  • 4 cups Powdered Sugar
  • ¾ cup Cocoa Powder
  • 2-3 teaspoons Vanilla Extract
  • 1-2 tablespoons Milk

Instructions

  1. Add the packages of cake mix, the packages of vanilla pudding mix, the melted butter, and the eggs to a mixing bowl. 
  2. Mix on medium speed just until the ingredients are combined.
  3. Add the sprinkles, mix quickly only enough to disperse the sprinkles throughout the cookie dough, you don't want to overmix this dough.
  4. Refrigerate the dough overnight or for at least one hour.
  5. Using an ice cream scooper (ours measures approximately 2.5 oz of cookie dough), scoop out the cold cookie dough and place it on a prepared cookie sheet lined with parchment paper.
  6. Bake the cookies in an oven preheated to 350 degrees for 12-13 minutes.  The cookies are done when they are just slightly brown along the bottom edges of the cookie.  (You don't want the cookies to brown too much on the top.)

  8. Frost the Cake Mix Cookies with the chocolate frost, just as you would a yellow birthday cake.  For a little extra razzle-dazzle, add more sprinkles around the edge of the chocolate frosting. 

    Notes

    Storage/Freezing Instructions
    Cookies should always be stored in an airtight container.  They should be completely cooled before storing them.   Because these are frosted cookies, we usually add a layer of parchment paper between each row of cookies in our plastic container.  Cookies stored at room temperature should stay fresh for 3-4 days.  You can also keep them in the refrigerator and that extends their freshness for up to a week. If you need them to last longer, you can freeze them for up to 3 months.  You can pull them out of the freezer and leave them on the counter for 1 hour and they will be ready to eat.
