Chocolate Peanut Butter Ritz Cookies

Peanut Butter, Ritz Crackers, and Chocolate combine into one fun and delicious homemade sandwich cookie - no baking required for these Chocolate Peanut Butter Ritz Cookies! Sweet and savory and delicious. Perfect for the Holidays.

Ingredients

  • 48 Ritz Crackers
  • 1 cup Peanut Butter (Creamy)
  • 1 package Dark Chocolate Melting Wafers

Instructions

  1. Start with two Ritz Crackers. Spread a spoonful of peanut butter on one of the crackers. We think cream peanut butter works best.  We like these cookies because they are a yummy combination of sweet and savory but if you want something a little sweeter you could make a Peanut Butter filling and use that instead.   2. Use the second cracker to make a sandwich and set it aside.  Make 24 Peanut Butter Ritz Cracker sandwiches.
  3. Pour the chocolate melting wafers (you can also use Chocolate Chips) into a shallow bowl.
  4. Melt the chocolate in the microwave.  Start at 20 seconds. Take the bowl out and give the chocolate a stir.  Continue to microwave at 10-second intervals until the chocolate is melted.
  5. The chocolate needs to be in a pourable consistency.
  6. Lay one of the Ritz Cracker sandwiched into the chocolate.
  7. Use a spoon to cover the top and the sides of the cracker with chocolate.
  8. Use a fork to lift the cookie out of the chocolate. Allow the excess chocolate to drip into the bowl.
  9. Place the chocolate-covered cookie on a parchment paper-lined cookie sheet to harden.
  10. If the cookies are for Christmas or another special event you can make them a little more festive with sprinkles.  Just remember to add the sprinkles while the chocolate is still soft.
