These adorable and delicious yellow and blue Minions Cookies are full of Mini M&M's and look just like the Minions from Despicable Me.

Ingredients

  • 1 cup Butter (softened)
  • 1 cup Granulated Sugar
  • 2 large Eggs
  • 2 teaspoons Vanilla Extract
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 3 cups All-Purpose Flour
  • 2 Bags M&M Minis - You will need only the blue and the yellows.
  • Black Icing

Instructions

  1. Cream the butter and sugar in a mixer until it is light and fluffy (about 2 minutes.)  Add the eggs and the vanilla and mix for another 2 minutes.  Mix in baking soda and salt.  Finally, mix in the flour one cup at a time.
  2. Separate the cookie dough into two portions, we used a food scale to weigh the cookie dough and then split it into two equal portions.
  3. Color the first portion yellow.  We added 5 drops of Yellow Wilton Color Right food coloring.
  4. Stir the yellow M&M Minis into the yellow cookie dough.
  5. Color the second portion of cookie dough blue.  We added 5 drops of blue Wilton Color Right food coloring.
  6. Stir the blue M&M Minis into the blue cookie dough.
  7. Using the food scale again, measure 2 ounces of cookie dough - 1 oz of blue dough and 1 oz. of yellow dough.
  8. Roll the yellow and the blue dough into balls and then press them together. Once on the cookie sheet, flattened the cookie dough and shape it into an oval Minion shape.
  9. Bake the Minions Cookies for 9-10 minutes in an oven that has been preheated to 350 degrees.
  10. Once the cookies have cooled, grab your Wilton Candy Eyes and some black icing.  We used store-bought black icing but you could also make up a small batch of Royal Icing.
  11. Some Minions have one big eye and some have two eyes. They all wear goggles.  Use the black icing to make the goggles and the minion's mouth.  Press the Wilton Candy eyes into the black icing.
