This vintage Pineapple Banana Fluff recipe is light and fluffy, bursting with banana and pineapple flavor and a great sweet side dish for a potluck, barbecue, or family dinner.

Ingredients

  • 20 oz. can Pineapple Chunks
  • 2 large Eggs
  • 2 tablespoons Granulated Sugar
  • 1 tablespoon All-Purpose Flour
  • 2 med./lg. Bananas (sliced)
  • 1 pint Whipping Cream

Instructions

  1. Drain the juices from the can of Pineapple into a medium saucepan.  Save the pineapple for later.
  2. Add the sugar and flour to the pineapple juice and stir until flour is dissolved.
  3. Whisk the eggs in a separate bowl and add to the pineapple mixture.
  4. Cook over medium heat until thick, stirring frequently to make sure it doesn't burn. When thickened, take off the heat and let cool.
  5. Add Whipping Cream to a separate bowl.
  6. Whip whipping cream with a mixer until stiff peaks form.
  7. The pineapple mixture must be cool to continue.
  8. Add sliced bananas and pineapple chunks to the saucepan.
  9. Stir until the fruit is covered in the pineapple mixture.
  10. Add the whipped cream and gently fold until combined.
  11. Spread the Pineapple Banana Fluff into a large glass bowl or a 9x13" glass baking dish.
  12. Chill for at least 2 hours before serving.

Notes

What kind of Canned Pineapple should I buy?
This recipe tastes best with Canned Pineapple in Heavy Syrup versus the type canned with the lighter Pineapple juices in order to infuse the fluff with the ultimate pineapple flavor.

How long will it stay fresh?
This is a dessert that will only last about 24 hours, after that the bananas start to brown.  It will still taste delicious but it isn't very appetizing so we recommend making this on the day you will serve it.
