Cinnamon Roll Breakfast Casserole

Store-bought Cinnamon Rolls are turned into something super yummy in this Cinnamon Roll Breakfast Casserole topped with homemade Cream Cheese Frosting. So easy to make and a true crowd-pleaser for a holiday breakfast or brunch.

Ingredients

Casserole

  • 2 cans Refrigerated Cinnamon Rolls
  • 6 tablespoons Butter (melted)
  •  4 large Eggs
  •  1 cup Heavy Cream
  • 2 teaspoons Vanilla Extract
  •  2 teaspoons Cinnamon

Streusel Topping

  •  1/2 cup Flour
  •  1/2 cup Brown Sugar
  •  1/2 cup Butter (cold)
  •  1 teaspoon Cinnamon

Streusel Topping

  1. In a small bowl, add the cold butter, flour, brown sugar, and cinnamon.
  2. Mix with a Pastry Cutter or a fork until the dry ingredients are combined with the butter for the streusel topping.
  3. Set aside.

Casserole

  1. Remove the Cinnamon Rolls from the container and cut each piece into quarters. Add the cinnamon roll pieces to a bowl.
  2. Melt 6 tablespoons of butter and pour it onto the cinnamon roll pieces. Toss the pieces until they are fully coated with the melted butter.
  3. Prepare a 9x13" baking dish with baking spray.
  4. Arrange the butter coated cinnamon roll pieces in the baking dish.
  5. Add the eggs to the bowl you were using and whisk together with the cream, vanilla, and cinnamon.
  6. Pour in the egg mixture over the cinnamon roll pieces in the baking dish.
  7. In a small bowl, add the cold butter, flour, brown sugar, and cinnamon.
  8. Crumble the Streusel Topping over the mixture in the baking dish.
  9. Bake in an oven preheated to 350 degrees for 45-50 minutes.
  10. Allow the casserole to cool for 15 minutes.

Icing

  1. While the casserole is baking, make a batch of our The Best Cream Cheese Frosting
  2. As soon as the casserole has cooled slightly, add the Cream Cheese Frosting and then serve immediately.

Notes

What kind of Cinnamon Rolls Should I use?
We like Pillsbury Cinnamon Rolls, the original version. They are the ones with the flecks of cinnamon throughout the dough. We think that the casserole has more cinnamon flavor with this version.  You'll need two cans of the regular-sized cinnamon rolls but about 1 1/2 rolls of the "Grands" size.


Can you bake this ahead and reheat the casserole in the morning?
You can.  But we have to honest, it is not going to taste as good as it does fresh out of the oven.  If you need to do this, don't add the frosting until right before you serve the casserole.
