These Snickerdoodle Bars taste just like the classic cookie but they are so much easier to make.  We actually think this recipe tastes BETTER than the original.

Ingredients

Cookie Bar

  • 1 cup Butter (Sweet Cream Salted, softened to room temperature)
  • 1 1/2 cups Granulated Sugar
  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Baking Soda
  • 2 teaspoon Cream of Tartar
  • 1/4 teaspoon Salt
  • 2 3/4 cups All-Purpose Flour

Topping

  • 1/4 cup Granulated Sugar
  • 2 teaspoons Cinnamon

Instructions

  1. Line a 9x13 with parchment paper and set aside.
  2. Add the butter and sugar into a mixing bowl.
  3. Using a mixer, cream the butter and sugar until light and fluffy (2-3 minutes.)
  4. Add the eggs and vanilla and mix well.
  5. Mix the dry ingredients together in a separate bowl.
  6. Add the flour mixture to the wet ingredients and mix until fully incorporated.
  7. Press the dough into the prepared 9x13 pan.  (Tip: Split the dough into 6, 1/2 cup balls to make pressing the dough into even layers easier.)
  8. Sprinkle the topping evenly over the dough.
  9. Bake in an oven preheated to 350 degrees for 20-25 mins.  Do not overbake.  The edges should be lightly brown.

Notes

How do I store the Snickerdoodle Bars?
Cool first and then store in an airtight container. They should stay fresh for 3-4 days.  They will be good in the freezer for up to 3 months.
