Snowball Cookies

Whether you call them Snowball Cookies, Mexican Wedding Cookies, or Russian Tea Cakes these buttery balls of cookie goodness are chocked full of pecans and rolled in Powdered Sugar. Delicious!

Ingredients

  • 1 cup Butter (Softened to room temperature)
  • 1/3 cup Granulated Sugar
  • 2 teaspoons Vanilla Extract
  • 2 cups All-Purpose Flour
  • 2 cups Pecans (finely chopped) - can also use Walnuts or Almonds
  • 1 cup Powdered Sugar (for rolling cookies)

Instructions

  1. In mixing bowl, beat together butter, vanilla and granulated sugar until fluffy.
  2. Add flour and mix.
  3. Add nuts and mix till fully incorporated.
  4. Cover and refrigerate dough for an hour.
  5. Remove dough from refrigerator .  Shape dough into 1 inch balls and place on cookie sheet.  (You can put them close together because they shouldn't spread.)
  6. Bake 350 for 13-15 minutes until they are just brown.
  7. Let cool for about 10 mins.
  8. While they are still warm, roll in powdered sugar. (They may need to be rolled in the sugar twice.)
  9. Place on wire rack to fully cool. 

Notes

Do Snowball Cookies have other names?
Yes.  Snowball Cookies are known by many names like Mexican Wedding Cookies and Russian Tea Cakes.

Why are my Snowball Cookies falling apart?
The dough will seem dry and grainy.  Just keep working the dough until all the flour and nuts are fully incorporated.  If you can't form the balls, add a little extra butter.

Storing/Freezing Instructions
These cookies can be frozen.  You may want to roll them in powdered sugar again after taking them out of the freezer.  Store any left-overs in a covered container at room temperature for up to a week.
