Instructions

To Cook Sweet Potatoes

  1. Wash and peel 3-4 Sweet Potatoes.
  2. Chop into equal-sized pieces.
  3. Add to a medium-sized pan, cover the sweet potatoes with water and boil until you can pierce them easily with a knife.
  4. Drain the potatoes.
  5. Mash the potatoes with a fork or a potato masher.
  6. Whip the potatoes with a mixer to breakdown the Sweet Potato fibers.  This process can take 3-5 minutes.

Pie Filling

  1. Add the Sweet Potatoes, Brown Sugar, and Spices to a mixing bowl and mix until combined.
  2. Add the Eggs, Evaporated Milk, and Vanilla to the bowl.
  3. Mix until thoroughly combined.
  4. Pour the pie filling into a single pie crust.
  5. Place the pie crust on a baking sheet. Add a Pie Shield to protect the edges of the pie crust if you have one.
  6. Bake in an oven pre-heated to 350 degrees for 50-60 minutes.
  7. Cool before serving.

Notes

What Type of Sweet Potato and How Many will you need?
We like to use fresh Garnet Yams which are actually Sweet Potatoes. They are purple on the outside and orange on the inside.  2 Medium-Large Sweet Potatoes yield approximately 2 cups of cooked and mashed sweet potato. You definitely can used Canned Sweet Potatoes in this recipe, but you should still whip them with the mixer to break down the fibers.

Storing Tips
You should store your left-over pie in the refrigerator.  It will be good for 4-5 days.

How do you know when the pie is done?
The pie is done when the sweet potato filling is no longer wobbly around the edge of the pie (about 2″ around the edge) but is still slightly wobbly in the center of the pie.  The pie will continue baking after you remove it from the oven and a cracked sweet potato pie is an over-baked sweet potato pie!
