Pumpkin Bars with Cream Cheese Frosting

These moist and delicious Pumpkin Bars feature a dark and rich pumpkin flavor and yummy homemade Cream Cheese Frosting.  Perfect for Fall or Thanksgiving or just a random Tuesday.

Ingredients

  • 4 Large Eggs
  • 1 1/2 cups Brown Sugar (packed)
  • 1 cup Oil
  • 1 can Pumpkin Puree (15 oz)
  • 1 teaspoon Vanilla Extract
  • 2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1 tablespoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Ginger
  • 1 teaspoon Salt
  • 1 batch of our The Best Cream Cheese Frosting

Instructions

  1. Add the eggs, oil, pumpkin, sugar, and vanilla to a mixing bowl.  Mix until well combined.
  2. In a separate bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt and mix until combined.
  3. Add the dry ingredients into the wet ingredients and mix together just until combined.  Do not over mix.
  4. Spray or line a 9x13 pan.
  5. Pour the batter into the prepared pan and spread into an even layer.
  6. Bake for 30-35 mins in an oven preheated to 350 degrees. To check for doneness, a toothpick inserted into the pumpkin bar should come out clean.
  7. Cool and frost with our The Best Cream Cheese Frosting.
  8. Cut into bars and serve.
