Our Pecan Pie Bars are everything that is yummy about a Pecan Pie (sweet and creamy filling, crunchy pecan topping and flaky crust) in an easy to make cookie bar recipe.

Ingredients

Shortbread Crust

  • 1 cup Butter (Sweet Cream Salted Butter, Cold and cubed)
  • 1/4 cup Brown Sugar (packed)
  • 1/4 cup Granulated Sugar
  • 2 cups All-Purpose Flour
  • 1/4 teaspoons Salt

Pecan Filling

  • 1 cup Light Brown Sugar
  • 1 1/2 cups Corn Syrup
  • 4 Large Eggs
  • 1 tablespoon Vanilla Extract
  • 1/3 cup All-Purpose Flour
  • 1 teaspoon Salt
  • 2 cups Pecans (chopped)

Instructions

  1. Add 2 cups flour, 1/4 cup brown sugar, and 1/4 cup Granulated Sugar and salt to a bowl.
  2. Add cold butter, cut into slices or cubes
  3. Mix until combined with a fork or a pastry cutter. (The mixture will be dry.) Press the mixture evenly into a lined 9x13" baking pan. (Lining the pan with parchment paper will make it easier to remove the bars).
  4. Bake in an oven preheated to 350 degrees for 15-18 minutes or until the edges are golden brown
  5. While the crust is baking, make the pecan filling.  In a large bowl combine sugar, corn syrup, eggs, and vanilla and mix until combined.
  6. Add in flour and salt and mix again.
  7. Add pecans.
  8. Stir until pecans are thoroughly mixed with the batter.
  9. When the edges of the crust are golden brown, remove the pan from the oven and pour the pecan mixture onto hot crust.
  10. Return to oven and bake for 25 minutes. Cool and cut into bars.
