Potato Skins are one of our favorite party foods, so easy to make and everybody loves them. Crispy on the outside, filled with melted cheese and bacon, what could be better?

Ingredients

  • 6 small to medium Russet Potatoes
  • 1 tablespoon Olive Oil
  • 2 teaspoons Garlic Salt
  • 2 cups Cheddar Cheese (grated)
  • 6 slices of Bacon (cooked and chopped)
  • 2 spears of Green Onions (chopped)
  • Sour Cream (optional to use as a garnish)

Instructions

  1. Scrub and wash your potatoes and then poke holes in them with a fork to keep them from exploding in the oven.
  2. Bake the potatoes in a pre-heated 400 degree oven for 60 minutes or until the potatoes skins are crisp on the outside and potato itself is soft to the touch on the inside.
  3. When the potatoes are baked, remove them from the oven and cut the them into halves, lengthwise.
  4. Scoop out the insides of the potatoes and place them in a bowl, leaving 1/4" of the potato on the skin. (You can use the insides to make Mashed Potatoes!)
  5. Turn over the potato skins on a prepared baking sheet and lightly cover the skins with olive oil and then sprinkle with garlic salt.
  6. Return the skins to a 450 degree oven and cook for 10 minutes to crisp up the skins.
  7. Once out of the oven, sprinkle the crispy potato skins with grated cheese and already cooked bacon pieces.
  8. Return them to the oven for 2-3 minutes or until the cheese is melted.
  9. Sprinkle chopped green onion and serve immediately.
