Yummy, bite-sized balls of crunchy, marshmallow-y delight, our Easter Rice Krispie Treat Bites are an easy-to-make Easter, Mother's Day, or Spring dessert.

Ingredients

  • 8 cups Kellogg's Rice Krispies Cereal
  • 8 tablespoons Butter (We use Salted, Sweet Cream Butter)
  • 8 cups Mini Marshmallows
  • Wilton Color Right Food Coloring - Yellow, Blue and Pink

Instructions

You will need to make four batches of Rice Krispie Treat mixture - one for each of the four spring colors Blue, Pink, Purple and Yellow.

Directions for a single batch of Rice Krispie Bites

  1. Melt 2 tbsp. Butter in a medium pan.
  2. Add 2 cups of Mini Marshmallows and stir until the marshmallows are completely melted.
  3. Take the pan off the heat.
  4. Add food coloring and mix.
  5. Add 2 cups of Rice Krispie Cereal and mix until they are completely covered with the marshmallow mixture.
  6. Allow the Rice Krispie Mixture to cool slightly.
  7. Measure .5 oz of mixture and roll into a ball.
  8. Allow Rice Krispie Bites to cool.
  9. Repeat for all of the Rice Krispie Bites colors.

Notes

Food Coloring Amounts
PInk: 2 drops of Pink Wilton Color Right Food Coloring
Yellow: 3 drops of yellow Wilton Color Right Food Coloring
Blue: 2 drops of Blue Wilton Color Right Food Coloring
Purple: 3 drops of pink and 2 drops of blue Wilton Color Right Food Coloring

Storage Instructions
Allow the Easter Rice Krispie Treat Bites to cool before you store them. This is a great Easter treat and you can make it well ahead. Store the Rice Krispie Treats in an airtight container and they will last for 3-4 days before they start to get too stale.  You can freeze them for up to 3 months.
