Easter Egg Cookies are a bite-sized version of the classic frosted sugar cookies with buttercream frosting. So yummy and so easy to make!

Ingredients

  • 1 cup Sweet Cream Salted Butter (softened)
  • 1 cup Granulated Sugar
  • 2 Large Egg
  • 1 tablespoon Vanilla Extract
  • 2 teaspoons Baking Powder
  • 3 cups All-Purpose Flour
  • The Best Buttercream Frosting
  • Wilton Color Right Food Coloring - Pink, Yellow and Blue
  • Confetti Sprinkles
  • Mini Easter Egg Cookie Cutter

Instructions

  1. Make a half-batch of our Best Sugar Cookie Recipe. Cream the butter and sugar. Mix in the egg and vanilla and beat until light and fluffy. Add in the baking powder. Mix in the flour one cup at a time.
  2. Roll out cookie dough and cut-out cookie bites with a Mini Easter Egg Cookie Cutter.
  3. Bake in a 350-degree oven for 4-5 minutes depending on how thick or thin you rolled the dough. Check on the cookies at the 4-minute mark, because they are so small you don’t want to over-bake them.  The edges will be slightly golden when they are ready to come out of the oven.
  4. Allow the cookies to cool.
  5. Make a batch of our Best Buttercream Frosting Recipe and split it into three portions. Color one purple, one pink, and one green.
  6. Frost the cookie bite hearts.
  7. Sprinkle the top of the frosting with Confetti Sprinkles.

Notes

Food Coloring Formulas
Purple: 2 drops of Pink Wilton Color Right Food coloring and 1 very small drop of Blue food coloring.
Green: 3 drops of Yellow Food Coloring and one very small drop of Blue food coloring.
Pink: 2 drops of Wilton Color Right Pink Food Coloring

Storage Instructions
Allow the Best Buttercream Frosting to set before you store the cookies away.  (But you don't have to wait to eat them!) Store them in an air-tight container with a piece of parchment paper or aluminum foil between each layer of cookies.  They will stay fresh for 3-4 days like this. Or you can freeze them for up to 3 months.
