Christmas Circus Animal Cookies are Homemade Circus Animal Cookies but in Holiday shapes and colors. Boy did we love the way these Christmas Cookies turned out.

Ingredients

  • 1/2 Batch of our The Best Sugar Cookie Recipe
  • Ghirardelli White Chocolate Melting Wafers
  • Wilton Candy Colors Oil Based Food Coloring - Red, Green
  • Nonpareils Christmas Sprinkles

Instructions

  1. Make a half-batch of our Best Sugar Cookie Recipe .
  2. Normally our Best Sugar Cookie Recipe doesn't need to be refrigerated before baking.  But this time we did cover the dough with plastic wrap and chill for 2 hours for this recipe.  The Mini Christmas Cutters are small and we wanted to make sure the shapes came out cleanly with sharp edges.  Chilling the dough really helped in this regard.
  3. Roll out the dough and cut out the cookies.
  4. Bake in a 350 degree oven for 4-5 minutes.  Check on the cookies at the 4 minute mark. You don't want them to over-bake.  Allow the cookies to cool.
  5. Melt 20-25 white chocolate wafers in the microwave.  We started out at 45 seconds in the microwave, stirred. and then continued heating them at 10 second intervals into they were completely melted.
  6. Place the Christmas Sugar Cookies in the melted chocolate to get the candy on the back of the cookie.
  7. Then we used a spoons to cover the entire cookie in the chocolate.
  8. Place the iced cookie on a piece of parchment paper and while the chocolate is still wet, sprinkle the top of the cookie with the Christmas colored Nonpareils Sprinkles.
  9. To make Red & Green Christmas Iced Cookies, add a small amount of a oil-based food coloring to the white chocolate and mix then repeat the icing process as described above.
