These Chocolate Dipped Peanut Butter Cookies are delicious, festive and so easy to make! Add this yummy Christmas Cookie recipe to your Christmas baking list.

Ingredients

  • 1 cup butter (Sweet Cream, Salted)
  • 1 cup Peanut Butter
  • 1 cup Granulated Sugar
  • 1 cup Brown Sugar (packed)
  • 2 Eggs
  • 2 tsp. Vanilla
  • 2 1/2 Cups Flour
  • 1 tsp. Baking Soda
  • 1 tsp. Baking Powder
  • Ghirardelli Chocolate Dark Melting Wafers
  • Christmas Confetti Sprinkles

Instructions

  1. To make the Peanut Butter Cookie dough, cream the butter and peanut butter in a mixer until fully combined.  Add 1/2 cup of flour and mix until the flour is incorporated.  Mix in granulated sugar and brown sugar.  Mix in eggs and vanilla until the dough is fluffy. Add in baking soda and baking powder. Finally, mix in the remaining 2 cups of flour, 1 cup at a time.
  2. Take a spoonful of cookie dough, roll it into a ball and place it on a cookie sheet. Gently press down on the ball a bit to flatten it slightly.
  3. Bake the cookies in a 375 degree oven for 7-9 minutes.
  4. Once the Peanut Butter cookies have completely cooled you get ready to dip them in the chocolate.  We used Ghirardelli Chocolate Dark Melting Wafers but you could also use Semi Sweet or Milk Chocolate Chips.
  5. Melt the chocolate slowly in the microwave, stopping to stir approximately every 10 seconds until the chocolate is fully melted.
  6. We dipped one half of each peanut butter cookie into the chocolate and used a spoon to smooth out the chocolate on both sides. We placed the cookie on a piece of parchment paper to allow the chocolate to cool. While the chocolate was still warm we gave the cookies a sprinkle with some pretty Holiday confetti.
  7. Let the Chocolate Dipped Peanut Butter Cookies set out until the chocolate is completely cooled.  Then wrap them in parchment paper or foil and store them in an airtight plastic container until you are ready to serve them.
