We know these are very popular cookies but Snowball Cookies were just not something we ever made for the Holidays.  Boy were we missing the Christmas Cookie boat. These nutty cookie balls are so yummy and so easy to make.  They are also not super sweet so if you have someone on your list that doesn’t have a gigantic sweet tooth, these are a great Cookie option for them.  From now on we will be adding these cookies to our must bake cookie list.

How to Make the Cookies

Step 1: In mixing bowl, beat together butter, vanilla, and granulated sugar until fluffy.
Step 2: Add flour and mix.
Step 3: Add nuts and mix till fully incorporated.
Step 4: Cover and refrigerate the dough for an hour.

Step 5: Remove dough from the refrigerator .
Step 6: Shape dough into 1 inch balls and place on cookie sheet.  (You can put them close together because they shouldn’t spread.)
Step 7: Bake in an oven preheated to 350 degrees for 13-15 minutes or until they are just brown.
Step 8: Let cool for about 10 mins.

Step 9: While the Snowball Cookies are still warm, roll in powdered sugar.
Step 10: They may need to be rolled in the sugar twice.
Step 11: Place on a wire rack to fully cool.

Why are my Snowball Cookies falling apart?

The dough will seem dry and grainy.  Just keep working the dough until all the flour and nuts are fully incorporated.  If you can’t form the balls, add a little extra butter.

Storing/Freezing Instructions

These cookies can be frozen.  You may want to roll them in powdered sugar again after taking them out of the freezer.  Store any left-overs in a covered container at room temperature for up to a week.

  • 1 cup Butter (Softened to room temperature)
  • 1/3 cup Granulated Sugar
  • 2 teaspoons Vanilla Extract
  • 2 cups All-Purpose Flour
  • 2 cups Pecans (finely chopped) - can also use Walnuts or Almonds
  • 1 cup Powdered Sugar (for rolling cookies)

Instructions
