These Snickerdoodle Bars taste just like the classic cookie but they are so much easier to make.  We actually think this recipe tastes BETTER than the original.

These cookie bars were a revelation for us.  If you love the taste of Snickerdoodles like we do but think that they are kind of a pain to make, this is the recipe for you.  These Snickerdoodle Bars are 1000 times easier to make than the traditional cookie version but they have the same great taste as the original – a cakey vanilla cookie topped with Cinnamon Sugar.  Give them a try,  you won’t be sorry!

Step 1: Add the butter and sugar into a mixing bowl.  Using a mixer, cream the butter and sugar until light and fluffy (2-3 minutes.) Add the eggs and vanilla and mix well.  Mix the dry ingredients together in a separate bowl. Add the flour mixture to the wet ingredients and mix until fully incorporated.

Step 2: Line a 9×13 with parchment paper and set aside.  Scoop the dough into the prepared 9×13 pan.  (Tip: Split the dough into 6, 1/2 cup balls to make pressing the dough into even layers easier.)

Step 3: Press the dough out evenly into the pan.

Step 4 & 5: Sprinkle the topping evenly over the dough.

Baking Instructions

Step 6: Bake in an oven preheated to 350 degrees for 20-25 mins.  Do not overbake.  The edges should be lightly brown.

Step 7: Using the parchment paper, lift the bars out of the baking pan and allow the Snickerdoodle Cookie Bars to cool completely before cutting into individual pieces.

Cool first and then store in an airtight container. They should stay fresh for 3-4 days.  They will be good in the freezer for up to 3 months.

Cookie Bar

  • 1 cup Butter (Sweet Cream Salted, softened to room temperature)
  • 1 1/2 cups Granulated Sugar
  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Baking Soda
  • 2 teaspoon Cream of Tartar
  • 1/4 teaspoon Salt
  • 2 3/4 cups All-Purpose Flour

Topping

  • 1/4 cup Granulated Sugar
  • 2 teaspoons Cinnamon

Instructions

  1. Line a 9x13 with parchment paper and set aside.
  2. Add the butter and sugar into a mixing bowl.
