These yummy Peach Crumble Bars feature sweet and delicious peaches sandwiched between a shortbread base and a crumble topping. Tastes just like a Peach Pie but is easier to make!

When we think of classic summer flavors, we think of peaches.  And when we think of peaches, we think of Peach Pie.  And we think of Peach Pie, we think of lots of steps and time in the kitchen.  That’s where this yummy Peach Crumble Bars recipe comes in. Same great taste as pie but with a lot less work. (And you can make this easy-to-make cookie bar all year long if you use canned or frozen peaches.)  Sweet and delicious peaches sandwiched between a shortbread base and a crumble topping. So yummy!

Ingredients You Will Need

All the ingredients you will need to make Peach Crumble Bars including sugar, brown sugar, peaches, eggs, flour, butter, lemon, cinnamon, baking powder, and salt.

Step 1: In a bowl whisk together flour, brown and white sugars, baking powder, salt (You do not need to add salt if you are using salted butter). 
Step 2: Once combined, cube the cold butter and add it to the flour mixture.  Use a pastry cutter or fork to work the cold butter into the flour mixture.
Step 3: Add the slightly beaten egg and use a pastry cutter or fork to mix the egg in.
Step 4: You will use half of this dough for the bottom layer of the bar and half as the crumble on the top of the bar.

Step 5: Butter a 9×13″ baking pan and line the pan with paper.  Leave edges hanging over to make it easier to get bars out of the pan. Add half of the dough mixture to the prepared pan and press it down so it is even and goes all the way to the edges of the pan. (Put the remaining crumble in the refrigerator while preparing the peaches.)
Step 6: Bake the crust in an oven preheated to 350 degrees for 15 mins.  (Let cool for at least 5 mins before adding peaches.)

Preparing the Peach Filling

Step 7: Peel and dice your peaches and add them to a mixing bowl.
Step 8: Sprinkle the diced peaches with a squeeze or two from a fresh lemon and toss.
Step 9: Add the granulated sugar, cinnamon, salt, and cornstarch to the bowl.
Step 10: Mix together, making sure all the peaches are covered in the sugar mixture. 

Baking Instructions

Steps 11-12: When the crust has cooled slightly, add the peaches to the top of the crust.  Use a slotted spoon to transfer the peaches onto the crust.  You don’t want to add any of the peach juice.
Steps 13-14: Once all the peaches are added, spoon the rest of the crumble over the peaches.

Step 15: Bake in your 350-degree oven for 45-50 mins.  The top of the bars should be slightly brown when it is done.
Step 16: Allow the Peach Crumble Bars to cool before you cut them into individual pieces.

Dough/Crumble

  • 3 cups All-Purpose Flour
  • 1/2 cup Brown Sugar
  • 1/2 cup Granulated Sugar
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1 cup Butter (Cold) (Sweet Cream Salted)
  • 1 Large Egg (Slightly beaten)
  • 1 heaping teaspoon Cinnamon

Peach Filing

  • 5 cups pealed and diced Peaches (About 6 or 7 peaches)
  • 3/4 cups Granulated Sugar
  • 1 heaping teaspoon Cinnamon
  • 1/4 teaspoon Salt
  • 3 tablespoons Cornstarch
  • 2 tablespoons Lemon Juice

Instructions
