Mini Monster Sugar Cookies are fun Halloween frosted sugar cookies with buttercream frosting and Monster Candy Eyes. So adorable and so easy to make!

We’ve combined two of our most popular recipes into an adorable Halloween treat that kids and adults will love at this year’s Halloween Party.  A yummy Mini Monster Sugar Cookie, topped with a dollop of our delicious homemade buttercream frosting and decorated with a candy Monster eye!  So fun, so yummy and so very easy to make!

How to Make the Sugar Cookies

Step 1:  First things first, Monster Cookie Bites start with our The Best Sugar Cookie Recipe.  This sugar cookie dough is easy to work with, tastes great, and really holds its shape during the baking process.  You can find the recipe and detailed instructions on how to make the dough here.  We made a half-batch of our Best Sugar Cookie Recipe and ended up with 100 Monster Cookie Bites that were approximately 1 inch wide. 
Step 2: We used a small biscuit cutter to cut out the circles.
Step 3: Bake in a 350-degree oven for 6-7 minutes depending on how thick or thin you rolled the dough. Check on the cookies at the 5-minute mark – the edges will be slightly golden when they are ready to come out of the oven.

How to Make the Buttercream Frosting

Step 4: Next, we whipped up a batch of our easy and delicious Best Buttercream Frosting Recipe.  We split this batch into three bowls to make our Orange, Green, and Purple frosting.  You can find our recipe for buttercream frosting here
Step 5: To color the frosting we used our Wilton Color Right Food Coloring in the following combinations:

Orange – 5 drops of Orange food coloring
Green – 4 drops of Yellow food coloring and 1 drop of Blue food coloring
Purple – 4 drops of Pink food coloring and 1 drop of Blue food coloring

Decorating Instructions

Step 6: Instead of frosting the cookies by hand with a knife, we decided to speed up the process by using decorating bags.  If you haven’t used these before, don’t worry. They sell them in the grocery store now and we aren’t going to do anything fancy with them.  Line up your cookies on a large cookie sheet and load the frosting into the decorating bags.  We used a Wilton 2A round decorating tip. We held the decorating tip just above the center of the cookie and added a dollop of frosting. If you hold the decorating tip fairly close to the cookie, you’ll get a circle-shaped dollop that is perfect for these Mini Monster Sugar Cookies.
Step 7: Now plop down a Candy Eye in the center of the frosting circle! Easy Peasy.  For some variety, we used different sizes of Candy Eyes on the cookies.  So colorful and adorable.  The kids are gonna love ’em.

Two Sisters Tip:  You can’t freeze these cookies because of the Candy Eyes. When the cookies defrost, the moisture from the defrosting process causes the Candy Eyes to run and smear. NOT GOOD!  So if you want to make these ahead, you’re going to want to store the cookies in the refrigerator, not the freezer.

Ingredients

Instructions

  1. Make a half-batch of our Best Sugar Cookie Recipe.
  2. Roll out cookie dough and cut out cookie bites with a small circle cookie cutter.
  3. Bake in a 350-degree oven for 6-7 minutes depending on how thick or thin you rolled the dough. Check on the cookies at the 5-minute mark, because they are so small you don't want to overbake them.  The edges will be slightly golden when they are ready to come out of the oven.
  4. Allow the cookies to cool.
  5. Make a batch of our Best Buttercream Frosting Recipe and split it into three portions. Color one batch purple, one orange, and one green.
  6. Using a decorating bag and a Wilton 2A Round Decorating Tip add a dollop of frosting to the sugar cookie.
  7. Push a Candy Eye (or multiple candy eyes) into the frosting.
