We’ve blended three of our favorite things into one seriously yummy dessert.  These Mocha Rice Krispie Treats feature the perfect combination of coffee and chocolate flavor in one easy-to-make Rice Krispie Treat that your friends and family will be you to make again and again. Rice Krispie Treats aren’t just for kids and this recipe right here is the proof. Enjoy!

Ingredients You Will Need

All the ingredients you will need to make Mocha Rice Krispie Treats.

How to Make the Marshmallow Mixture

Step 1: Melt the butter in a large saucepan on medium-low heat.
Step 2: Add the Mini Marshmallows to the melted butter.
Step 3: On medium-low heat, stir the marshmallows so they are completely covered in the melted butter. Then continue to stir until the marshmallows are completely melted. Take the pan off the heat.

Adding the Mocha and the Rice Krispie Cereal

Step 4: In a small bowl, dissolve 2 tablespoons of Instant Coffee in 1 teaspoon water. Stir until the coffee crystals have dissolved. Add the Instant Coffee mixture to the marshmallow mixture and stir until combined.
Step 5: Now add Cocoa Powder to the marshmallow mixture.
Step 6: Stir until combined.

Steps 7-8: Add the Rice Krispie Cereal to the mocha marshmallow mixture and gently fold the Rice Krispie Cereal into the marshmallow mixture.

Assembly Instructions

Step 9: Spoon the mixture into a 9×13″ pan.  (We line the pan with a piece of parchment paper to make it easier to remove the treats from the pan when they are cooled.)
Step 10: Lightly press the mixture into the pan and then let them cool completely.

Steps 11-12: Place the White Chocolate Melting Wafers in a plastic bag. Melt in the microwave. Cut a small top of the corner of the plastic bag off.
Step 13: Use the plastic bag as a makeshift decorating bag to drizzle the White Chocolate on the Rice Krispie Treats and then allow the White Chocolate drizzle to cool and harden.

Steps 14-15: Remove the treats from the pan and then cut them into squares.

Serving/Storage Instructions

Rice Krispie Treats will last 2-3 days at room temperature in an air-tight container before they start to get stale.  You can extend that timeline a few days if you store them in the refrigerator and then take them out about 30 minutes before you eat them.  They freeze up great though and that is what we do if we want to make these ahead of time for a party or a family gathering.  They defrost very quickly and taste great once they are defrosted.  You can keep them in the freezer for up to a couple of months.

Ingredients

  • 8 tablespoons Butter (Sweet Cream Salted)
  • 8 cups Mini Marshmallows
  • 8 cups Rice Krispies Cereal
  • 2 tablespoons Dark Roast Instant Coffee
  • 1 teaspoon Water
  • 2 tablespoons Cocoa Powder
  • 20-30 White Chocolate Melting Wafers

Instructions

  1. In a small bowl, dissolve 2 tablespoons of Instant Coffee in 1 teaspoon water. Stir until the coffee crystals have dissolved. Set bowl aside.
  2. Melt the butter in a large saucepan on medium-low heat.
  3. Add the Mini Marshmallows to the melted butter and stir the marshmallows so they are completely covered in the melted butter.
  4. On medium-low heat, stir the marshmallows continually until they are completely melted.
  5. When the marshmallows are melted, take the pan off the heat.
  6. Add the Instant Coffee mixture and the Cocoa Powder to the marshmallow mixture and stir until combined.
  7. Add the Rice Krispie Cereal to the mocha marshmallow mixture and gently fold the Rice Krispie Cereal into the marshmallow mixture.
  8. Spoon the mixture into a 9x13" pan.  (We line the pan with a piece of parchment paper to make it easier to remove the treats from the pan when they are cooled.)
  9. Lightly press the mixture into the pan. 
  10. Let the Rice Krispie Treats cool in the pan.
  11. Place the White Chocolate Melting Wafers in a plastic bag. Melt in the microwave. Cut a small top of the corner of the plastic bag off and use the plastic bag as a makeshift decorating bag to drizzle the White Chocolate on the Rice Krispie Treats.
  12. Allow the White Chocolate drizzle to cool and harden.
  13. Remove the treats from the pan and then cut them into squares.
