Mint Chocolate Chip Cookies
As the saying goes, “There are only two kinds of people in the world, the Irish and those who wish they were Irish.” We are not Irish but we do like a good St. Patrick’s Day treat. These Mint Chocolate Chip Cookies really fit the bill.
Mint Chocolate Chip Cookies Recipe
Ingredients:
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup (2 sticks) butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon mint extract
- 1 teaspoon Green Food Coloring
- 2 large eggs
- 2 cups (12-oz. pkg.) Chocolate Chips
This is the traditional Nestle Toll House Cookie recipe (with a couple of St. Patrick’s Day themed additions.) We’ve tried many MANY chocolate chip cookie recipes over the years and we always end up going back to this tried and true version.
Add the butter, sugar and brown sugar to the mixing bowl and then mix the ingredients slowly until the dough is creamy.
Add the eggs and vanilla to the dough and mix again. Then add the dry ingredients (flour, salt and baking soda) and thoroughly mix. This was the point that we added the teaspoon of Mint extract and the teaspoon of green food coloring. Finally, add the chocolate chips and incorporate using a spoon instead of the mixer.
Roll the Mint Chocolate Chip Cookies dough into golf ball sized balls and place on the cookie sheet at least 2″ apart.
Bake in a 350 degree oven for 8-10 minutes. This recipe will make approximately 20 cookies of this size.
Our St. Patrick’s Day Mint Chocolate Chip Cookies were a success. The mint flavor was subtle to the taste but very aromatic, especially when eating a cookie that was still warm from the oven. We highly recommend this twist on the traditional chocolate chip cookie. Happy St. Patrick’s Day everyone!!!
