Mini Rice Krispie Easter Eggs
Our Mini Rice Krispie Easter Eggs are yummy, colorful, bite-sized Easter Eggs made out of crunchy, marshmallow-y Rice Krispie Treats.
Easter is a time of celebration. It was also our mother’s favorite holiday. When we were kids Mom came up with the idea to have both a family favorite dessert and a new never-been-tried dessert for Easter dinner. Over the years, Nancy and I have tried to stay true to this family tradition. Inevitably we go back to our beloved Rice Krispie Treats when thinking up the new dessert. This year we have come up with these adorable, yummy, and colorful Mini Rice Krispie Easter Eggs. So tiny you can eat one in a single bite but boy is that a delicious bite! We think mom would love them. We know we do!
How to Make the Rice Krispie Treat Mixture
Step 1: The base for our Mini Rice Krispie Easter Eggs is our Best Ever Rice Krispie Treat Recipe which we have adjusted and perfected over the years until it is now absolutely the best Rice Krispie Treat recipe we have ever tasted. You can find all the directions you’ll need to make these delicious treats right here. We made Easter Eggs in Green, Purple, Blue, Yellow, and Pink so you will need to make five separate batches of Rice Krispie Treat mixture.
How to Make a Mini Rice Krispie Treat Easter Egg
Step 2: First, make a 3 Cup batch of Rice Krispie Treat mixture (3 Tbsp. Butter/3 Cups Mini Marshmallows/3 Cups Cereal). Add the food coloring BEFORE you add the Rice Krispie Cereal. To create this pretty shade of Pink we used 3 drops of Pink Wilton Color Right Food Coloring.
Step 3: Add the Rice Krispie Cereal and stir until the cereal is covered with the marshmallow mixture. Allow the pink Rice Krispie Treat mixture to cool enough so you can handle it but that it is still malleable.
Step 4: To get Rice Krispie Bites that were the same sized I measured .3 oz. of the mixture on my food scale and then used my hands to mold it into an easter egg shape. If the mixture is too sticky, rub your fingers with some butter.
Step 5: I was able to make 19 Mini Rice Krispie Treat Easter Eggs from this 3 cup batch of Rice Krispie Treat Mixture.
Step 6: For the green eggs, follow the directions listed above. We got this pretty color of green by using 4 drops of yellow food coloring and 1 drop of blue.
Step 7: For the yellow eggs, we added 4 drops of yellow food coloring to the marshmallow mixture.
Step 8: For the bright eggs, we added 3 drops of Blue food coloring. (Tip: Don’t add too much blue food coloring or you will end up with Aqua/Teal Rice Krispie Bites as the yellow from the marshmallow mixture and the Rice Krispie Cereal will mix with the blue food coloring to make teal.)
Step 9: For the purple eggs, we added 4 drops of pink and 1 drop of blue food coloring to the marshmallow mixture.
Step 10: Allow the Mini Rice Krispie Easter Eggs to cool before you store them. Store them in an airtight container and they will last for 3-4 days before they start to get too stale. You can freeze them for up to 3 months.

Mini Rice Krispie Easter Eggs
Our Mini Rice Krispie Easter Eggs are yummy, colorful, bite-sized Easter Eggs made out of crunchy, marshmallow-y Rice Krispie Treats.
Ingredients
- 15 cups Kellogg's Rice Krispies Cereal
- 15 tablespoons Butter (Sweet Cream Butter)
- 15 cups Mini Marshmallows
- Wilton Color Right Food Coloring System - Yellow, Blue, Pink
Instructions
You will need to make five batches of Rice Krispie Treat mixture - one for each of the five spring colors Blue, Pink, Purple, Green and Yellow.
Directions for a single batch of Rice Krispie Bites
- Melt 3 tbsp. Butter in a medium pan.
- Add 3 cups of Mini Marshmallows and stir until the marshmallows are completely melted.
- Take the pan off the heat.
- Add food coloring and mix.
- Add 3 cups of Rice Krispie Cereal and mix until they are completely covered with the marshmallow mixture.
- Allow the Rice Krispie Mixture to cool slightly.
- Measure .3 oz of mixture and mold into a mini Easter Egg.
- Allow Rice Krispie Bites to cool.
- Repeat for the other Mini Rice Krispie Easter Egg colors.
Notes
Food Coloring Formulas
Pink: 3 drops of Pink Wilton Color Right Food Coloring
Green: 4 drops of yellow food coloring and 1 drop of blue
Yellow: 4 drops of yellow food coloring
Blue: 3 drops of Blue food coloring
Pink: 4 drops of Pink food coloring and 1 drop of Blue Food Coloring
