We’ve turned the idea of a Lemon Bar dessert on its head by combining the sweet but tart citrus flavor of lemon with the crunch of a classic Rice Krispie Treat. Our Lemon Rice Krispie Treats are chocked with lemon tang and enhanced with a drizzle of homemade lemon icing while still being bolstered by the comforting flavors of marshmallows and cereal. This recipe is perfect for brunch, a family gathering, or as a special surprise for that lemon lover in your life.

How to Make Homemade Lemon Icing

Step 1: Start by making the homemade Lemon Icing.  Add the powdered sugar and 2 tablespoons of melted butter to a mixing bowl.
Step 2: Stir with a spoon until mixed. It will still seem dry.
Step 3: Add 1 tablespoon of lemon juice and mix until combined.
Step 4: Continue to add the lemon juice, one tablespoon at a time, until the icing is smooth and the correct consistency for drizzling over the pan of Rice Krispie Treats.

How to Make the Marshmallow Mixture

Step 5: Melt the butter in a large saucepan on medium-low heat. You don’t want the heat on too high or you can burn the butter.
Step 6: Add the Mini Marshmallows to the melted butter and stir them so they are completely covered in the melted butter.
Step 7: Stir the marshmallows continually until they are completely melted. As soon as the marshmallows are melted, take the pan off the heat.

Adding the Lemon Pudding Mix and the Rice Krispie Cereal

Step 8: Add the package of Lemon Instant Pudding to the melted marshmallow mixture.
Step 9: Stir until the Lemon Pudding is completely combined with the marshmallow mixture.
Step 10: Add the Rice Krispies Cereal to the pan.
Step 11: Fold together until the cereal is completely covered in the lemon marshmallow mixture.

Assembly Instructions

Step 12: Spoon the mixture into a 9×13″ pan. We add a piece of parchment paper to the pan so it will be easier to remove the treats when they are cooled.
Step 13: Lightly press the mixture into the pan.  You don’t want to press the mixture down too much, smooth the top with a spatula or butter your fingers and pat down the top. Let the treats cool.
Steps 14-15: Pour the Lemon Icing into a plastic bag, snip off a tiny corner on the bottom of the bag, and use this makeshift decorating bag to drizzle the icing over the cooled pan of Lemon Rice Krispie Treats.

Steps 16-17: Use the parchment paper to remove the treats from the pan and then cut them into individual servings.

Storing/Serving Instructions

Rice Krispie Treats will last 2-3 days at room temperature in an air-tight container before they start to get stale.  You can extend that timeline a few days if you store them in the refrigerator and then take them out about 30 minutes before you eat them.  They freeze up great though and that is what we do if we want to make these ahead of time for a party or a family gathering.  They defrost very quickly and taste great once they are defrosted.  You can keep them in the freezer for up to a couple of months.

  • 8 tablespoons Butter (We use Sweet Cream Salted Butter)
  • 8 cups Mini Marshmallows
  • 8 cups Rice Krispie Cereal
  • 1 package Lemon Instant Pudding (3.4 oz)

Lemon Icing

  • 1 cup Powdered Sugar
  • 2 tablespoons Butter (Sweet Cream Salted, Melted)
  • 1-2 tablespoons Lemon Juice

Instructions

Lemon Rice Krispie Treats

  1. Melt the butter in a large saucepan on medium-low heat.
  2. Add the Mini Marshmallows to the melted butter and stir the marshmallows so they are completely covered in the melted butter.
  3. On medium-low heat, stir the marshmallows continually until they are completely melted.
  4. When the marshmallows are melted, take the pan off the heat.
  5. Add the package of Instant Lemon Pudding to the Marshmallow mixture and stir until combined.
  6. Add the Rice Krispie Cereal to the marshmallow mixture and gently fold the Rice Krispie Cereal into the marshmallow mixture.
  7. Spoon the mixture into a 9x13" pan.  (We line the pan with a piece of parchment paper to make it easier to remove the treats from the pan when they are cooled.)
  8. Lightly press the mixture into the pan. 
  9. Let the Rice Krispie Treats cool in the pan.
  10. Drizzle the Lemon Icing on the pan of treats and allow the icing to harden.
  11. Remove the treats from the pan and then cut them into squares.

  1. Add the powdered sugar and melted butter to a mixing bowl.
  2. Stir with a spoon until mixed. It will still seem dry.
  3. Add lemon juice, 1 tablespoon at a time, and stir with a spoon.
  4. Continue to add the lemon juice until the icing is smooth and the right consistency for drizzling over the pan of Lemon Rice Krispie Treats.
