These Gingerbread Rice Krispie Treats taste like Christmas. We’ve taken our popular Rice Krispie Treat recipe and infused it with the warm and comforting flavors of Gingerbread like molasses, ginger and nutmeg! And guess what, it’ll be the easiest dessert you’ll make this holiday season and it will get the most rave reviews from your family and friends.  Merry Christmas from our family to yours!

Ingredients You Will Need

How to Make the Marshmallow Mixture

Step 1: Melt the butter in a large saucepan on medium-low heat.
Step 2: Add the Mini Marshmallows to the melted butter and on medium-low heat, stir the mixture until it is completely melted.
Step 3: When the marshmallows are melted, take the pan off the heat.

Adding the Gingerbread Flavors

Step 4: Add the Molasses to the pan.
Step 5: Add the Cinnamon, Ginger, and Nutmeg to the marshmallow mixture.
Step 6: Stir until combined.

Adding the Rice Krispies Cereal

Step 7: Add the Rice Krispie Cereal to the marshmallow mixture.
Step 8: Gently fold the Rice Krispie Cereal into the marshmallow mixture.

Assembly Instructions

Step 9: Spoon the mixture into a 9×13″ pan.  (We line the pan with a piece of parchment paper to make removing the treats from the pan easier when they are cooled.)
Step 10: Lightly press the mixture into the pan. 
Step 11: If you would like, sprinkle the top with Christmas Sprinkles.

Step 12: Let the Rice Krispie Treats cool and then remove the treats from the pan.
Step 13: Cut the treats into individual pieces.

Serving/Storing Instructions

Rice Krispie Treats will last 2-3 days at room temperature in an air-tight container before they start to get stale.  You can extend that timeline a few days if you store them in the refrigerator and then take them out about 30 minutes before you eat them.  They freeze up great though and that is what we do if we want to make these ahead of time for a party or a family gathering.  They defrost very quickly and taste great once they are defrosted.  You can keep them in the freezer for up to a couple of months.

  • 4 tablespoons Butter (Sweet Cream, Salted)
  • 8 cups Mini Marshmallows
  • 1/4 cup Molasses
  • 1 teaspoon Cinnamon
  • 1 teaspoon Ground Ginger
  • 1 teaspoon Nutmeg
  • Christmas Sprinkles

Instructions

    1. Melt the butter in a large saucepan on medium-low heat.
    2. Add the Mini Marshmallows to the melted butter and on medium-low heat, stir the mixture until it is completely melted.
    3. When the marshmallows are melted, take the pan off the heat.
    4. Add the Molasses, Cinnamon, Ginger, and Nutmeg to the marshmallow mixture and stir until combined.
    5. Add the Rice Krispie Cereal to the marshmallow mixture.
    6. Gently fold the Rice Krispie Cereal into the marshmallow mixture.
    7. Spoon the mixture into a 9x13" pan.  (We line the pan with a piece of parchment paper to make removing the treats from the pan easier when they are cooled.)
    8. Lightly press the mixture into the pan. 
    9. OPTIONAL: sprinkle the top with Christmas Sprinkles.
    10. Let the Rice Krispie Treats cool in the pan.
    11. Remove the treats from the pan and then cut them into squares.
