These Crispy Garlic Roasted Potatoes are a deliciously seasoned side dish featuring potatoes that are crispy on the outside, fluffy on the inside, and come out of the oven perfectly roasted every time.

We are a potato family. We love potatoes in all their forms – especially a Baked Potato which is our go-to dinner side-dish. But if we are feeling a little fancy we make these Crispy Garlic Roasted Potatoes. There are definitely a few extra steps than baking a potato but these yummy oven-roasted potatoes are worth it. Crispy on the outside and fluffy on the inside they are simply delish. We have all the tips you’ll need to make sure they come out of the oven super flavorful and perfectly roasted every time.

Ingredients you will need

All the ingredients you will need to make Crispy Garlic Roasted Potatoes including Baby Potatoes, Olive Oil, Garlic, Rosemary, Salt and Pepper.

How to Make the Garlic Oil

Step 1: Use a Garlic Press to crush 8 cloves of garlic and then add the crushed garlic, the salt, the pepper, and the finely chopped Rosemary to the olive oil. Stir and set aside while the potatoes are cooking so the flavors have a chance to combine.

Preparing the Potatoes

Step 2: Wash and then chop the Baby Potatoes into evenly sized chunks. This is an important step that will help ensure that the potatoes roast evenly.
Step 3: Soak the potato pieces in a bowl of ice cold water for 30-60 minutes to remove some of the starch. This will help the potatoes crisp up in the oven.
Step 4: Pour out the water and completely dry (wet potatoes will lead to soggy potatoes!) the potato pieces with a towel and return them to the bowl.
Step 5: Drizzle the Olive Oil mixture over the potatoes and toss until the potatoes are thoroughly covered with the seasoned garlic olive oil.

Roasting Instructions

Step 6: Spread the potato pieces on a cookie sheet lined with parchment paper or aluminum foil.  The pieces should NOT be touching. We usually add a sprig of Rosemary to the cookie sheet.
Step 7: Roast the potatoes in an oven preheated to 400 degrees for 40 minutes. Flip the potatoes at the 20-minute mark to make sure they get evenly roasted. That’s it … not too hard but oh so yummy.
