This year we turned less than one cup of Eggnog into cupcakes that taste so close to a glass of spiked Eggnog that we dare you to tell the difference. So if your family loves this distinct holiday flavor as much as ours does, you’ll definitely want to add these Eggnog Cupcakes with Butter Rum Frosting to your holiday baking list!
How to Make the Cupcakes
Step 1: Add the yellow cake mix, vanilla pudding mix, and melted butter to a mixing bowl. Add the remaining ingredients to the mixing bowl – oil, eggs, vanilla, and Eggnog. Mix the Eggnog Cupcake ingredients for a full 7 minutes. After 3 or 4 minutes you will be tempted to stop. Do not! It really makes a difference in how the finished cupcakes will taste.
Step 2: Spoon the Eggnog cupcake batter into the cupcake liners.
Step 3: Bake the cupcakes in a 350-degree oven for 25-28 minutes.

Ingredients
- 1 package Yellow Cake Mix
- 1 large package Vanilla Pudding
- 3/4 cups Oil
- 3/4 cups Eggnog
- 4 Large Eggs
- 1 tablespoon Butter (melted)
- 1 batch of our Butter Rum Buttercream Frosting
- Christmas Sprinkles
Instructions
- Combine cake mix, pudding, oil, eggs, eggnog, and melted butter in a mixing bowl.
- Beat mixture for 7 minutes.
- Pour the batter into cupcake liners in a cupcake pan.
- Bake in an oven preheated to 350 degrees for 25-28 minutes.
- Allow the cupcakes to cool.
- Frost with Butter Rum Buttercream Frosting
