Easter Egg Cookies
Easter Egg Cookies are a bite-sized version of the classic frosted sugar cookies with buttercream frosting. So yummy and so easy to make!
Frosted Sugar Cookies are one of our most favorite kinds of cookies. And these “mini” Easter Egg Cookies are a perfect Easter brunch treat. They are so easy to decorate that even the youngest family member can join in on the fun. And most importantly, they are a super delicious bite-sized treat of yummy sugar cookies and creamy buttercream frosting. You’ll definitely want to add these cookies to your Easter Baking List this year! These colorful and delicious Easter Egg Sugar Cookies Bites are a perfect Easter treat and the kids will love baking and decorating them with you. Sugar Cookie Baking Instructions
Step 1: Our Easter Egg Sugar Cookies Bites start with our Best Sugar Cookie Recipe. This sugar cookie dough is easy to work with, tastes great, and really holds its shape during the baking process. You can find the recipe and detailed instructions on how to make the dough here. We made a half-batch of our Best Sugar Cookie Recipe and ended up with 160 Easter Egg Sugar Cookie Bites that were approximately 1 inch tall.
Step 2: We used a Mini Easter Egg Cookie Cutter to cut out our Easter Egg Sugar Cookies.
Step 3: Bake in a 350-degree oven for 4-5 minutes depending on how thick or thin you rolled the dough (the cookies will need to bake a little longer if you don’t use mini cookie cutters.)
Step 4: Check on the cookies at the 4-minute mark, because they are so small you don’t want to over-bake them. The edges will be slightly golden when they are ready to come out of the oven.
How to Frost the Cookies
Step 5: Next, whip up a batch of our easy and delicious Best Buttercream Frosting Recipe. We split this batch into three bowls to make our pink, purple, and green frosting. You can find our recipe for buttercream frosting here. These are the food coloring formulas we used to make each of these three frosting colors:
Purple: 2 drops of Pink Wilton Color Right Food coloring and 1 very small drop of Blue food coloring.
Green: 3 drops of Yellow Food Coloring and one very small drop of Blue food coloring.
Pink: 2 drops of Wilton Color Right Pink Food Coloring
Steps 6-8: Once you have your frosting ready to go there are no fancy decorating skills required. Use a knife to spread the yummy buttercream frosting onto the Easter Egg Cookies and then add sprinkles. So easy … so fun!
Storage Instructions
Step 9: Allow the Best Buttercream Frosting to set before you store the cookies away. (But you don’t have to wait to eat them!) Store them in an air-tight container with a piece of parchment paper or aluminum foil between each layer of cookies. They will stay fresh for 3-4 days like this. Or you can freeze them for up to 3 months.

Ingredients
- 1 cup Sweet Cream Salted Butter (softened)
- 1 cup Granulated Sugar
- 2 Large Egg
- 1 tablespoon Vanilla Extract
- 2 teaspoons Baking Powder
- 3 cups All-Purpose Flour
- The Best Buttercream Frosting
- Wilton Color Right Food Coloring - Pink, Yellow and Blue
- Confetti Sprinkles
- Mini Easter Egg Cookie Cutter
Instructions
- Make a half-batch of our Best Sugar Cookie Recipe. Cream the butter and sugar. Mix in the egg and vanilla and beat until light and fluffy. Add in the baking powder. Mix in the flour one cup at a time.
- Roll out cookie dough and cut-out cookie bites with a Mini Easter Egg Cookie Cutter.
- Bake in a 350-degree oven for 4-5 minutes depending on how thick or thin you rolled the dough. Check on the cookies at the 4-minute mark, because they are so small you don’t want to over-bake them. The edges will be slightly golden when they are ready to come out of the oven.
- Allow the cookies to cool.
- Make a batch of our Best Buttercream Frosting Recipe and split it into three portions. Color one purple, one pink, and one green.
- Frost the cookie bite hearts.
- Sprinkle the top of the frosting with Confetti Sprinkles.
