Cupcakes with Lemon Curd and Lemon Whipped Cream Frosting
Our Cupcakes with Lemon Curd and Lemon Whipped Cream Frosting are yummy cupcakes filled with sweet, rich homemade Lemon Curd and topped with our light and creamy Lemon Whipped Cream Frosting. Delish!
We are on quite the lemon dessert kick here at Two Sisters – bars, cupcakes, cookies and frostings of all kinds. Tart but sweet, light and delicious and perfect at any time of the year, these Cupcakes with Lemon Curd are especially good and super easy to make. If you don’t have a lot of time but really want to wow someone, this is a great go-to lemon dessert.
The night before you are going to make your cupcakes, make some homemade Lemon Curd. Our Lemon Curd recipe comes from our Mom by way of her old Betty Crocker cookbook. (Sometimes, the classics are classics for a reason.) Place the sugar and cornstarch in a small pan on medium heat. Add the water and stir until the sugar and cornstarch dissolve. Stir in the lemon juice, lemon zest and beaten egg yolks . Mix. Cook until bubbly but not boiling, stirring constantly for 4-5 minutes until the curd thickens. Take the curd off of the heat, stir in the butter and allow the curd to cool in the refrigerator overnight covered with a plastic wrap so it does not develop a film on the top.
Once your Lemon Curd has completely cooled and the flavors have fully developed, make a batch of cupcakes. We used a White Cake mix that we doctored to taste more like homemade. You can find our tips and tricks for Working with Cake Mixes here.

Fill decorating bags with the Lemon Curd and the Lemon Whipped Cream Frosting and you are all set to assemble these yummy cupcakes.
There are a lot of fancy ways to fill a cupcake, we just press the decorating tip into the cup and add some filling. Easy peasy.

Ingredients
- White Cake Mix for Cupcakes
- Lemon Curd (see ingredients below)
- The Best Lemon Whipped Cream Frosting
- Cupcake Liners
- Cupcake Pan
- Decorating Bags
- Wilton 2D Decorating Tip
Lemon Curd
- 3/4 cup Granulated Sugar
- 2 tbsp. Cornstarch
- 1/2 cup Water
- 2 Egg Yolks
- 1 tsp. Lemon Zest
- 3 tbsp. Lemon Juice
- 1 tbsp. Butter
Instructions
- Make the Lemon Curd the night before you make the Cupcakes.
- Place the sugar and cornstarch in a small pan on medium heat.
- Add the water and stir until the sugar and cornstarch dissolve.
- Stir in the lemon juice, lemon zest and beaten egg yolks and combine.
- Cook until bubbly but not boiling, stirring constantly for 4-5 minutes until the curd thickens.
- Take the curd off of the heat, stir in the butter and allow the curd to cool in the refrigerator overnight covered with a plastic wrap so it does not develop a film on the top.
- Make a batch of white cupcakes according to the direction on the back of the box.
- Allow the cupcakes to cool.
- Using a decorating bag, fill the cupcakes with a small amount of Lemon Curd.
- Frost the cupcakes with The Best Lemon Whipped Cream Frosting.
