Over the years we have found that cookie bars are always a popular dessert for a party, potluck, or family gathering. They are easy to make like cookies but delicious and filling like a cake or cupcake. Now add chocolate and edible cookie dough and you have a dessert that is sure to wow your guests. We have combined two of our most popular recipes into a brand-new dessert bar that got rave reviews from our family and friends. How to Make the Brownie Layer
Step 1: The Brownie Layer in these bars is our versatile and delicious Chocolate Cookies recipe. Yummy but not too sweet, this is the perfect base for this Cookie Dough bar. You will want to make a single batch of cookie dough. You can find the recipe and the detailed instructions for making this chocolate cookie dough right here. Place a piece of parchment paper in a 9×13″ baking pan. You want the parchment paper to go up over the long sides of the pan so you can easily pull the cookie bar out of the pan once the giant chocolate cookie has been baked. Spoon the chocolate cookie dough into the pan and spread it out using a spatula. Bake the cookie bar in a 350 degree oven for 15-18 minutes and then allow it to completely cool before adding the frosting layer.
How to Make the Cookie Dough Frosting Layer
Step 2: Make a batch of our The Best Cookie Dough Frosting. This frosting tastes just like Chocolate Chip cookie dough but it is totally safe to eat because there are no eggs and you bake the flour before making the frosting. This is one of our most popular frostings and if you love cookie dough (is there anybody out there that doesn’t love cookie dough?) you will love this frosting. How much frosting will you need? In the pictures with this recipe you will see a generous layer of Cookie Dough Frosting. We doubled the recipe and cut the bars into smaller pieces. If you decide to have a thinner layer of frosting, you could make bigger bars! Everybody wins! Step 3: Pull the cooled chocolate cookie layer out of the 9×13″ pan. It will be easier to frost outside of the pan. Spoon The Best Cookie Dough Frosting onto the chocolate cookie layer and spread it over the cookie with a knife or a spatula.
How to Make the Chocolate Layer
Step 4: Chocolate! Pour one package of Ghirardelli Dark Chocolate Melting Wafers into a glass bowl or large measuring cup.
Step 5: Melt them in the microwave.
Step 6: Heat the chocolate wafers in short bursts, stir, and then heat again until the chocolate is completely melted.
Step 7: Stir until the melted chocolate is completely smooth.
Step 8: Pour all of the melted chocolate onto the Cookie Dough Brownie Bars, keeping the chocolate towards the middle of the bar.
Step 9: Use a knife or a spatula to spread the melted chocolate over the Cookie Dough Frosting. Allow the melted chocolate to cool and harden.
Serving Instructions
Step 10: Cut into individual bars. We used a knife dipped in hot water to carefully cut through the top chocolate layer without breaking it. Store the Cookie Bars in an airtight container. You can store them in the refrigerator but they taste best at room temperature.

Ingredients
Chocolate Cookie Layer
- 1 cup butter (Sweet Cream, Salted)
- 3/4 cup Granulated Sugar
- 2/3 cup Brown Sugar (packed)
- 2 Eggs
- 1 tsp. Vanilla
- 2 1/4 Cups Flour
- 2/3 Cup Unsweetened Cocoa Powder
- 1 tsp. Baking Soda
- 1/4 tsp. Salt
The Best Cookie Dough Frosting
- 1 cup (2 sticks) Butter
- 3/4 cup Brown Sugar
- 1 cup Powdered Sugar
- 1 cup Flour
- 2 tsp Vanilla
- 1/2 tsp Salt
- 4 tbsp – 1/4 cup Milk (for desired consistency)
- 3/4 – 1 cup of Mini Chocolate Chips (depending on how chippy you want it)
Other Ingredients
- Ghirardelli Dark Chocolate Melting Wafers
- 9x13" Baking Pan
- Parchment Paper
Instructions
- Make a batch of our Chocolate Cookie Dough. You can find detailed instructions here.
- Bake the cookie dough in a 9x13" baking pan lined with parchment paper in a 350 degree oven for 15-18 minutes.
- Allow cookie layer to cool.
- Make a single or double batch of our The Best Cookie Dough Frosting. You can find detailed instructions here.
- Spread the The Best Cookie Dough Frosting on the cooled chocolate cookie layer.
- Melt a package of Ghirardelli Dark Chocolate Melting Wafers in the microwave.
- Spread the melted chocolate on the top of the frosting.
- Allow the chocolate layer to cool and harden.
- Cut the bars into pieces.
