Cookie Butter is a flavor we’ve just recently come to embrace. Which is strange because what’s not to love about butter made out of spice cookies? To make up for the lost time we doubled down on the flavor in these Cookie Butter Rice Krispie Treats by including both cookie butter and Biscoff Cookie pieces. So yummy. So easy to make. And chock full of the warm spicy flavor that cookie butter is known for. Enjoy!
Ingredients You Will Need
How to Make the Marshmallow Mixture
Step 1: Melt the butter in a large saucepan on medium-low heat.
Step 2: Add the Mini Marshmallows to the melted butter.
Step 3: Stir the marshmallows so they are completely covered in butter. On medium-low heat, stir the marshmallows continually until they are melted, and then take the pan off the heat.
Adding the Cookie Butter and the Rice Krispie Cereal
Steps 4-5: Add the Cookie Butter to the marshmallow mixture. Stir until thoroughly combined.
Step 6: Add the Rice Krispies cereal to the Cookie Butter mixture.
Step 7: Fold together until the cereal is covered in the Cookie Butter marshmallow mixture.
Step 8: Add the crushed Biscoff Cookie pieces.
Step 9: Stir until combined.
Assembly Instructions
Step 10: Spoon the mixture into a 9×13″ pan. We line our pan with parchment paper.
Step 11: Lightly press the mixture into the pan. You don’t want to press the mixture down too compactly, just smooth the top with a spatula or butter your fingers and pat down the top.
Step 12: Sprinkle fine Biscoff Cookie Crumbs on the top of the treats. (Optional)
Steps 13-14: Let the Rice Krispie Treats cool and then cut them into squares.
Serving/Storage Instructions
Rice Krispie Treats will last 2-3 days at room temperature in an air-tight container before they start to get stale. You can extend that timeline a few days if you store them in the refrigerator and then take them out about 30 minutes before you eat them. They freeze up great though and that is what we do if we want to make these ahead of time for a party or a family gathering. They defrost very quickly and taste great once they are defrosted. You can keep them in the freezer for up to a couple of months.

- 4 tablespoons Salted Sweet Cream Butter
- 8 cups Mini Marshmallows
- 1/2 cup Cookie Butter
- 8 cups Rice Krispie Cereal
- 5-6 Biscoff Cookies (crumbled)
Instructions
- Melt the butter in a large saucepan on medium-low heat.
- Add the Mini Marshmallows to the melted butter.
- Stir the marshmallows so they are completely covered in butter.
