We’ve taken our delicious Rice Krispie Treat recipe, infused it with just the right amount of coffee flavor, and then drizzled on a generous helping of coffee-flavored icing. So delicious. So unique. Ingredients You Will Need
How to Make the Marshmallow Mixture
Step 1: Melt the butter in a large saucepan on medium-low heat.
Step 2: Add the Mini Marshmallows to the melted butter and stir the marshmallows so they are completely covered in the melted butter.
Step 3: On medium-low heat, stir the marshmallows continually until they are completely melted. When the marshmallows are melted, take the pan off the heat.
Adding the Coffee Flavor and the Rice Krispies Cereal
Step 4: In a small bowl, dissolve 2 tablespoons of Instant Coffee in 1 teaspoon water. Stir until the coffee crystals have dissolved. Add the Instant Coffee mixture to the marshmallow mixture.
Step 5: Stir until combined.
Step 6: Add the Rice Krispie Cereal to the coffee marshmallow mixture.
Step 7: Gently fold the Rice Krispie Cereal into the marshmallow mixture.
Assembly Instructions
Step 8: Spoon the mixture into a 9×13″ pan. (We line the pan with a piece of parchment paper to make it easier to remove the treats from the pan when they are cooled.)
Step 9: Lightly press the mixture into the pan.
Step 10: Make the Coffee Icing. In a small bowl, dissolve 2 tablespoons of Instant Coffee in 2 tablespoons of milk. Stir until the coffee crystals have dissolved. In another bowl, add the Powdered Sugar and the melted butter. Whisk together until combined. (The mixture will be dry.) One teaspoon at a time, add the Instant Coffee liquid to the bowl and mix. Keep adding Instant Coffee liquid until the icing is the correct consistency to drizzle over the pan of treats.
Step 11: Place the Coffee Icing in a plastic bag. Cut a small top of the corner of the plastic bag off and use the plastic bag as a makeshift decorating bag to drizzle the icing on the Rice Krispie Treats.
Step 12: Allow the Coffee Icing to cool and harden.
Steps 13-14: Remove the treats from the pan and then cut them into squares.
Serving/Storage Instructions
Rice Krispie Treats will last 2-3 days at room temperature in an air-tight container before they start to get stale. You can extend that timeline a few days if you store them in the refrigerator and then take them out about 30 minutes before you eat them. They freeze up great though and that is what we do if we want to make these ahead of time for a party or a family gathering. They defrost very quickly and taste great once they are defrosted. You can keep them in the freezer for up to a couple of months.

Coffee Rice Krispie Treats
- 8 tablespoons Butter (Sweet Cream Salted)
- 8 cups Mini Marshmallows
- 8 cups Rice Krispies Cereal
- 2 tablespoons Dark Roast Instant Coffee
- 1 teaspoon Water
Coffee Icing
- 2 tablespoons Dark Roast Instant Coffee
- 2 tablespoons Milk
- 1/2 cup Powdered Sugar
- 1 tablespoon Butter (melted)
Instructions
Coffee Rice Krispie Treats
- In a small bowl, dissolve 2 tablespoons of Instant Coffee in 1 teaspoon water. Stir until the coffee crystals have dissolved. Set bowl aside.
- Melt the butter in a large saucepan on medium-low heat.
- Add the Mini Marshmallows to the melted butter and stir the marshmallows so they are completely covered in the melted butter.
