This Cinnamon Roll Breakfast Casserole is the next best thing to homemade Cinnamon Rolls. All the same great flavors in one easy to make casserole.  And since it is so easy to make,it is a great option for a special holiday morning breakfast or a lazy Sunday morning family brunch.  Put this one on your must-try list, you won’t be sorry.

Ingredients you will need

All the ingredients need to make Cinnamon Roll Breakfast Casserole including canned cinnamon rolls, eggs, butter, vanilla, cream and cinnamon.

How to make the Streusel Topping

Step 1: In a small bowl, add the cold butter, flour, brown sugar, and cinnamon.
Step 2: Mix with a Pastry Cutter or a fork until the dry ingredients are combined with the butter for the streusel topping and then set aside.

How to make the Breakfast Casserole

Step 3: Remove the Cinnamon Rolls from the container and cut each piece into quarters.
Step 4: Add the cinnamon roll pieces to a bowl and melt 6 tablespoons of butter in the microwave.
Step 5: Pour the melted butter over the cinnamon roll pieces. Toss the pieces until they are fully coated with the melted butter. Prepare a 9×13″ baking dish with baking spray and arrange the butter coated cinnamon roll pieces in the baking dish.
Step 6: Now add the eggs, cream, cinnamon, and vanilla to the bowl that used to hold the cinnamon pieces.  No need to wash it out first.

Step 7: Whisk together the eggs, cream, vanilla, and cinnamon.
Step 8: Pour in the egg mixture over the cinnamon roll pieces in the baking dish.
Step 9: Crumble the Streusel Topping over the mixture in the baking dish.
Step 10: Bake the casserole in an oven preheated to 350 degrees for 45-50 minutes.  Allow the casserole to cool for 15 minutes.

As soon as the casserole has cooled slightly, add the Cream Cheese Frosting and then serve immediately.  If you add the frosting immediately after you take the casserole out of the oven, the frosting will melt into the casserole.

What kind of Cinnamon Rolls Should I use?

We like Pillsbury Cinnamon Rolls, the original version. They are the ones with the flecks of cinnamon throughout the dough. We think that the casserole has more cinnamon flavor with this version.  You’ll need two cans of the regular-sized cinnamon rolls but about 1 1/2 rolls of the “Grands” size.

Can you bake this ahead and reheat the casserole in the morning?

You can.  But we have to honest, it is not going to taste as good as it does fresh out of the oven.  If you need to do this, don’t add the frosting until right before you serve the casserole.

  • 2 cans Refrigerated Cinnamon Rolls
  • 6 tablespoons Butter (melted)
  •  4 large Eggs
  •  1 cup Heavy Cream
  • 2 teaspoons Vanilla Extract
  •  2 teaspoons Cinnamon

  •  1/2 cup Flour
  •  1/2 cup Brown Sugar
  •  1/2 cup Butter (cold)
