Christmas Sugar Cookie Bars
A unique take on a Frosted Sugar Cookie, these Christmas Sugar Cookie Bars are delicious, easy to make and will be an instant holiday family favorite.
Every year for Christmas, Laurie and I like to add something new to our Christmas baking. We always bake our standards (Sherry Cake, English Toffee, Christmas Cookies), but then we find one new thing to add. This has led to some nice discoveries (Apple Doodle Cookies), and some real stinkers (Cathedral Marshmallow Bars). This year we decided to try these Christmas Sugar Cookie Bars. The recipe for the bar cookies is different than our beloved Sugar Cookie Recipe but these Christmas Sugar Cookie Bars turned out DELICIOUS too. And they were so easy to make. These will definitely be added to our normal baking rotation.
How to Make the Cookie Bar Dough
Step 1: Mix softened butter and sugar in a mixing bowl until fluffy. Add vanilla and eggs and mix. Add dry ingredients. (P.S. if you are someone who likes the taste of cookie dough and isn’t afraid of raw eggs, this dough tastes AMAZING!!!)
Step 2: Cover a cookie sheet with parchment paper. You can skip this step and grease the cookie sheet instead but the parchment paper will really help the edges of the cookies not get brown during the baking process. Pour all of the dough out onto the prepared cookie sheet.
Step 3: Press the dough down onto the cookie sheet. This was a pretty big cookie sheet so we didn’t use the whole thing. The dough is soft and sticky so it is a little tricky to get the dough evenly distributed on the cookie sheet. I covered the dough with parchment paper to make the process a little easier. Press the dough down so it is about 3/4″ high.
Step 4: Bake the Cookie Bars in a 375-degree oven for 10-15 minutes. Do not overbake the cookies. It will not come out of the oven a deep golden brown – in fact, it might look a little un-done. Use a toothpick to test it, if the toothpick comes out clean it is done. If you bake it too long, the cookie bars will be dry.
How to Make the Buttercream Frosting
Step 5: Let the cookie bar cool completely and then frost them. We used our super delicious Buttercream Frosting (recipe can be found here.) and tinted it both red and green.
Step 6: Before the frosting begins to set up, add some pretty Christmas Sprinkles. These Christmas Sugar Cookie Bars are super delicious and a unique take on the traditional frosted sugar cookie. We will definitely be making these again and again!

Ingredients
- 1 cup Butter (softened to Room Temperature)
- 2 cups Granulated Sugar
- 4 Large Eggs
- 2 teaspoons Vanilla Extract
- 5 cups All-Purpose Flour
- 1/2 teaspoon Baking Soda
- 1 batch of our The Best Buttercream Frosting
- Christmas Sprinkles
- Wilton Color Right Food Coloring - Red, Yellow, Blue
Instructions
- Cream butter and sugar.
- Add eggs and vanilla and mix.
- Add dry ingredients, mix well.
- Spread on cookie sheet covered with parchment paper.
- Bake at 375 degrees for 10-15 min or until a toothpick comes out clean. Do not overbake!
- Cool.
- Frost with Best Buttercream Frosting.
