Christmas Circus Animal Cookies
Christmas Circus Animal Cookies are Homemade Circus Animal Cookies but in Holiday shapes and colors. Boy did we love the way these Christmas Cookies turned out.
Circus Animal Cookies are a guilty pleasure of ours. We’ve had a homemade version of our Cookie To Do List for quite a while. This year for Christmas we decided to make a Christmas Themed version – the same yummy sugar cookie base covered in icing and sprinkles but in iconic Christmas Shapes and colors. Boy, are we happy with how these Holiday Circus Cookies turned out!
How to Make the Sugar Cookies
Step 1: Our Christmas Animal Circus Cookies start with our Best Sugar Cookie Recipe. This sugar cookie dough is easy to work with, tastes great, and really holds its shape during the baking process. You can find the recipe and detailed instructions on how to make the dough here. We made a half-batch of our Best Sugar Cookie Recipe and ended up with 120 cookies.
Step 2: Normally our Best Sugar Cookie Recipe doesn’t need to be refrigerated before baking. But this time we did cover the dough with plastic wrap and chilled it for 2 hours. The Mini Christmas Cutters are small and we wanted to make sure the shapes came out cleanly with sharp edges. Chilling the dough really helped in this regard.
Step 3: Roll out the dough and cut out the cookies.
Step 4: Bake in an oven pre-heated to 350 degrees oven for 3-4 minutes. Check on the cookies at the 3-minute mark. You don’t want them to over-bake.
Step 5: Allow the mini Sugar Cookies to cool before beginning the icing process.
Covering the Cookies with White Chocolate
Step 6: The icing for these cookies is white chocolate. You can use Wilton Candy Melts but we think the white chocolate tastes the most like a Circus Animal Cookie. Melt 20-25 white chocolate in the microwave. We started out at 45 seconds in the microwave, stirred, and then continued heating them at 10-second intervals into they were completely melted.
Step 7: Place the Christmas Sugar Cookies in the melted chocolate to get the candy on the back of the cookie.
Step 8: Then we used a spoon to cover the entire cookie in the chocolate.
Step 9: Place the iced cookie on a piece of parchment paper and while the chocolate is still wet, sprinkle the top of the cookie with the Christmas-colored Nonpareils Sprinkles.
Step 10: You’ll also need some old-based food coloring. Wilton has a good product that we used that you can find on Amazon. To make Red and Green Christmas Iced Cookies, add a small amount of oil-based food coloring to the melted white chocolate and then repeat the process as outlined above. We used the same Nonpareils Sprinkles on all three colors of cookies – so pretty. Christmas Circus Cookies! We love how these Holiday Circus Cookies turned out … just like Circus Animal Cookies but Holiday shapes and colors. This Christmas Cookie Recipe is a keeper for us! Happy Holidays from our family to yours!
