Cheesy Scalloped Potatoes

When we are making a hearty “meats and potatoes” type of meal we often pull out this yummy recipe for Cheesy Scalloped Potatoes. Super flavorful and chock full of potatoes and melted cheese sauce this one is a crowd-pleaser. This is a great side dish for a holiday meal or a special family dinner and easier to make than you might think. Enjoy!

How to Make Scalloped Potatoes
Step 1: Peel the potatoes and slice them into 1/4″ round slices with a Mandolin and finely chop the onion and garlic.
Step 2: Melt the butter over medium heat in a pan. Add in the onion and garlic and cook until the onions are translucent.
Step 3: Add the flour to the pan and stir and until combined.
Step 4: Pour in the milk and cook, stirring occasionally, until the mixture thickens.
Step 5: Stir in 2 1/2 cups of the shredded cheese.
Step 6: Stir until mixed. (Save the other 1/2 cup for the top of the casserole.)
How to Assemble for the oven
Step 7: Spray a 9×13″ baking pan with cooking spray. Add a single layer of potatoes in the pan and Salt and Pepper to taste.
Step 8: Add a layer of the cheese sauce.
Step 9: Repeat this process until you have three layers of potatoes and cheese sauce.
Step 10: Cover the pan with aluminum foil and bake in an oven pre-heated to 400 degrees for 60 minutes. Remove the foil at the 60-minute mark. Continue to cook for 30 more minutes. At the 80 minute mark, open the oven and sprinkle the remaining 1/2 cup of cheese on the top of the casserole. Cook 10 more minutes.
Step 11: The Cheesy Scalloped Potatoes should be served hot but you should let the casserole rest for 10-15 minutes before serving so it can set up a bit. The leftovers will keep in the refrigerator in an air-tight container for up to a week.
Expert Tips and FAQ’s
We use Russet Potatoes sliced super thin with a Mandolin slicer.
We use Cheddar Cheese but use your favorite or any combination of your favorite cheeses. Monterey Jack, Asiago, Colby or Blue Cheese would also taste great.

- 2 cups White Onion (finely chopped)
- 4 tablespoons Butter
- 1 tablespoon Garlic (minced)
- 4 tablespoons All-Purpose Flour
- 2 cups Milk
- 3 cups Cheddar Cheese (grated)
Instructions
