Step 1: This recipe begins with our The Best Sugar Cookie Recipe.  This sugar cookie dough is easy to work with, tastes great, and really holds its shape during the baking process.  You can find the recipe and detailed instructions on how to make the dough here.  We made a half-batch of sugar cookie dough with only one change … in addition to the vanilla, we added 1 1/2 teaspoons of Peppermint Extract at the same time as the vanilla to add a hint of Peppermint to the sugar cookies.

Sugar cooke dough rolled out with a circle cookie cutter and a rolling pin.

Step 2: We rolled out the dough and used a small biscuit cutter to cut out the small circles.

Step 3: Bake in a 350-degree oven for 3-4 minutes depending on how thick or thin you rolled the dough.
Step 4: Check on the cookies at the 3-minute mark, the edges will be slightly golden when they are ready to come out of the oven.

Step 9: We used a decorating bag and a Wilton 2A Round Decorating Tip to frost the cookies.  Super easy and saves so much time.  We lined up the cookies on a large cookie sheet and added a round dollop of Peppermint Frosting on each of the cookie bites.
Step 10: Finally, we pressed some of the crushed candy canes onto the frosting.  Pretty and yummy, a great combination. These colorful and fun Candy Cane Peppermint Buttercream Cookie Bites are great Christmas cookies. If you are a peppermint lover, you will love these cookies!
