Ingredients You Will Need

All the ingredients you will need to make Butterscotch Rice Krispie Treats.

How to Make the Marshmallow Mixture

Step 1: Melt the butter in a large saucepan on medium-low heat.
Step 2: Add all of the Mini Marshmallows to the pan.
Step 3: Add 1 1/4 cups of the Butterscotch Chips to the melted butter and marshmallows and then on medium-low heat, stir the mixture until both the marshmallows and the butterscotch chips completely melt.
Step 4: When the marshmallows are melted and the butterscotch is fully combined with the marshmallows, take the pan off the heat.

Adding the Rice Krispies Cereal

Steps 5-6: Add the Rice Krispies Cereal to the marshmallow mixture and gently fold the cereal into the marshmallow mixture.

Assembly Instructions

Step 7: Spoon the mixture into a 9×13″ pan.  (We line the pan with a piece of parchment paper to make removing the treats from the pan easier when they are cooled.)
Step 8: Lightly press the mixture into the pan. 
Step 9: Sprinkle the top of the treats with 1/4 cup of Butterscotch Chips and press them lightly into the treats.

Step 10: Let the Rice Krispie Treats cool.
Step 11: Remove the treats from the pan and then cut them into squares.

Serving/Storage Instructions

Rice Krispie Treats will last 2-3 days at room temperature in an air-tight container before they start to get stale.  You can extend that timeline a few days if you store them in the refrigerator and then take them out about 30 minutes before you eat them.  They freeze up great though and that is what we do if we want to make these ahead of time for a party or a family gathering.  They defrost very quickly and taste great once they are defrosted.  You can keep them in the freezer for up to a couple of months.

  • 8 tablespoons Butter (Sweet Cream, Salted)
  • 8 cups Mini Marshmallows
  • 1 1/2 cups Butterscotch Chips
  • 8 cups Rice Krispies Cereal

Instructions

  1. Melt the butter in a large saucepan on medium-low heat.
  2. Add all of the Mini Marshmallows and 1 1/4 cups of the Butterscotch Chips to the melted butter and on medium-low heat, stir the mixture until both the marshmallows and the butterscotch chips completely melted.
  3. When the marshmallows are melted and the butterscotch is fully combined with the marshmallows, take the pan off the heat.
  4. Add the Rice Krispie Cereal to the marshmallow mixture and gently fold the Rice Krispie Cereal into the marshmallow mixture.
