Spring M&M Cookies
Spring M&M Cookies are yummy chocolate chip cookies with pretty pastel colored M&M’s for Easter, spring brunch or just for fun!
Happy Spring!! We are celebrating by treating ourselves with these beautiful Spring M&M Cookies. They are soft, chewy, chocolately, yummy bites of cookie goodness.
Add the butter, sugar and brown sugar to your mixing bowl. Cream the butter and sugars until mixed. You’ll notice that unlike a traditional chocolate chip cookie recipe, there is more brown sugar than white sugar in this recipe. This particular proportion of brown sugar to white sugar will make the Spring M&M Cookies softer and chewier and less cake-like than a 50-50 mix.
Add a large egg, a large egg yolk and vanilla and then mix.
Add the dry ingredients (flour, salt and baking soda) and mix until the flour is thoroughly incorporated.
Instead of mixing M&M’s into the cookie dough, I added a small bag of Mini Chocolate Chips to the cookie dough. The mini chips added the perfect hint of chocolate to the cookies.
Chill the dough in the refrigerator for at least 30 minutes before baking.
Take a heaping tablespoon of cookie dough and roll it into a ball. Place the cookie dough balls approximately 2″ apart on the cookie sheet. Lightly press down on the ball to slightly flatten the cookie dough before baking.
Bake cookies in a 375 degree oven for 8 minutes total. I also rotated the cookie sheets in the oven after 4 minutes. The cookies should be slightly browning around the edges but still soft in the middle. The middles might look a little undone but don’t worry and go ahead and take them out of the oven unless you like a crispier chocolate chip cookie.
Immediately after removing the cookies from the oven press the M&M’s lightly into the top of the still hot cookies in whatever pattern you like. (TIP: remember to put the M&M logo down!) I had sorted my bag of Easter M&M’s by color and used a different color for each batch of cookies but they would also look pretty with a mixed pastel pattern.

- 2 cups plus 2 tbsp all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 sticks unsalted butter (softened)
- 1 cup light brown sugar
- 1/2 cup sugar
- 1 large egg plus 1 egg yolk
- 2 tsp vanilla extract
- 1 package Mini Chocolate Chips
- 1 package Easter M&M's (sorted by color)
- Cookie Sheets
Instructions
- Cream butter and sugar.
- Add eggs and vanilla and mix until incorporated.
- Add dry ingredients.
- Add Mini Chocolate Chips.
- Chill dough for 30 minutes.
- Bake in a 375 degree oven for 8 minutes.
- Immediately after removing cookies for the oven, press Easter colored M&M's onto the top of the cookie.
- Let cookie cool.
